Have you tried updating your laptop's firmware through the Intel Driver & Support Assistant? Also, try running the Window audio troubleshooter and see how it goes.

I assume it has Realtek HD Audio built-in.
Please download the newest Realtek HD Audio drivers from realtek website and install them. There should be realtek app for managing connected devices like: external speakers, headset, headset with mic (it should prompt for it, but it also depends on the realtek app version).

According to the Intel driver and support assistant all is up to date - I've tried uninstalling drivers via device manager and then reinstalling both by 'scan for hardware changes' and by restarting and letting windows install automatically, but the problem persists
I've tried multiple known working headphones all get ignored when plugged into the 3.5mm jack

Thanks for the heads up. Did you also try what FiszPL's suggested? You may perform the Windows system restore to go back to a date or known good restore point. This process will only restore your system files and settings. It will not alter your documents, pictures, videos, batch files, or other personal data stored on hard disks. However, applications installed after the restore point will be lost. I recommend saving your files or any documents you are working on from that software/program. Feel free to send me a PM should you need additional assistance.

Think my last resort is to install Window 11 at this stage

Yes, you can. Also, try reverting your laptop's operating system first to its factory state by following the article. Send me a ping if this doesn't work or venture to your suggested step.
