I can't seem to find any details about this online.
Basically I plug my headset in to the only aux input on the laptop, so I don't need the splitter, but I sill tried through that and nothing happened.
I get sound through my headset but my mic is still the built in mic and there are no options to switch to.
What am I missing here? I use this headset on my iMac and it works perfectly fine there.

Do you mind sharing screenshots of how the headset appears on the Device Manager? For now, I highly recommend that you reinstall the audio drivers on your laptop. If the headset works on another platform, then we're highly likely dealing with either a port or a driver issue.
