i bought a Razer Deathadder v3 Pro and i cant find a higher pulling rate than 1000, but people are talking about 8000 and 4000.

Yes, the basic one (Hyperspeed dongle) is capable of 1kHz MAX.
Hyperpolling dongle can handle up to 8kHz.
