Every single time razer synapse 3 updates it refuses to open on my computer and I have to jump through loops to get it to work again. Can I just disable these updates and not have it effect how it runs already?

When trying to open the Synapse app, did prompt you with an error message? After updating the app make sure to restart your PC to complete it. Try to repair the Synapse app by following the steps here. Should the problem persists, proceed by performing a clean installation of Synapse 3 by following this guide.
