Can you ENABLE doubleclicking?

You can't change the function of the left mouse button, but you can set another button as left-click and enable turbo on Synapse. That said, do this at your own risk as some games consider this as cheating.

Drag clicking is actualy populair in the minecraft community, like almost every minecraft server hates ppl that use cheats, like autoclicker. I really shoudn't do it, its bannable.

Any type of macro or script work is bannable in most games since time immemorial. That said, drag clicking is now considered as mouse abuse by most communities. There's also a lot of Minecraft servers that are banning people because of it, so I wouldn't recommend going that route, especially if you're particularly fond of PVP.

You can do that on Synapse 3 by navigating to the Customize tab for your mouse, as shown in the photo below.
