I have only one monitor. It is decent but it is about 10 years old. (it is also 1050p for some odd reason)
1 monitor is good but if I was streaming I would use 2 so I can have software on one and the game on the other

I have 2 and only use my 2nd one when I do something that requires a full screen so I don't have to keep alt tabbing.
I very recently started using a second monitor which is actually my 1080p TV. What I want at some point in the future is to have at least 5 4K monitors. Preferably 6. Actually, ultimately, I want a wall of 4K monitors. For no other reason than simply because I feel like it and it would look super cool. There's seriously NO need for that many... But it's something I want just to say I did it LOL!!!

Always use at least two at home and work. The second is essential when working around multiple pieces of Adobe Software. I would love a third, but the desk real estate isn't happening anytime soon for me.

Yeah, I know the feeling. For me the desk has enough room, but I can't afford another monitor, nor can my current CPU support another monitor without bursting into flames.
I use 2 but would prefer 3, and I've tried just about everything to get 3 monitors up and running on my PC, but I guess I'll just have to wait until I get a second gpu.
I use one 5 year old full HD 21.5 inch monitor and recently I plugged in some old one I found which doesn't have a company name on it... (this monitor is at least 8 years old ish)
recently broke an old Philips monitor from the stone age, but i have always loved to have two monitors in almost all situations.
It has become synonymous of multi-tasking for me.
I use 3 monitors, but in all honesty I only pay attention to 2 out of the 3. One specifically for gaming, and the other for group chats and to know if someone joined/left. The third one is just to launch games on steam/origin/uplay etc.
I only use one decently sized monitor and it is just fine for work and for Overwatch, the only real reason I want another monitor is so I can see my Discord feed while playing to see if any of our teammates are online
Well, as I am somewhat limited on desk space, I use two monitors and my PC next to em because I hate having it on the floor.
I use 3 monitors (same setup for work/whatever else) and above them I have a TV.
I definitely make use of my 3 monitors because I often work with large spreadsheets.
